Pumpkin soup is rich, nutritious and delicious – the perfect dish for autumn weather.
Plus, many people will have pumpkins left over after Halloween, which can be used for this soup.

To prepare, you will need: 1 kg of peeled pumpkin, 1 onion, 2 cloves of garlic, 500 ml of vegetable broth, 200 ml of coconut milk, salt, pepper and olive oil. Chop the onion and garlic, fry them in olive oil until soft. Add the pumpkin pieces and fry for 5 minutes. Pour in the broth, bring to the boil, then reduce the heat and simmer for 20 minutes until the pumpkin is soft. Puree the soup using a blender, add coconut milk, salt and pepper to taste. Heat the soup for a couple more minutes, without bringing it to a boil. Serve the soup hot, garnished with herbs and white bread croutons.
